TOCINO A LA CAGAYAN

Ingredients
1 kilo sliced pork                                    6 tbsp. sugar
1/2 tsp. saltpeter                                     2 tbsp. salt
1/2 tsp. black pepper                             1/4 tsp. red food coloring
Wash sliced pork and drain.
Mix the 5 different ingredients and rub on the sliced pork.
Refrigerate or soak overnight then fry over slow fire.
The longer the refrigeration, the better.
