CHICKEN PARMIGIANA

Ingredients
3 tbsp. fine dry bread crumbs                                3 tbsp. grated cheese
     dash of white pepper                                       1/4 tsp. salt
1 egg, slightly beaten                                            3 tbsp. flour
2 tbsp.  butter or oil                                                     1 lemon, cut in quarters
2 whole boned and skinned chicken breasts
     cut in halves
Combine and mix well first 4 ingredients.
Dip chicken breasts first in flour, then egg and finally in first mixture.
Heat butter and oil in skillet until hot.
Add chicken and brown over medium heat about 5 minutes on each side, or until crisp,
     golden brown and done.
Garnish each piece with a lemon quarter.
Good with frozen creamed spinach (heated in pouch) and cooked rice.
Serve hot.
