BUNGET-STRETCHER MEAT LOAF


Ingredients:
1 small red pepper
1 small green pepper
1 cup chopped onion
1 ½ lbs. Ground beef
2 cups coarsely crumbled
  Saltines
1 tsp. salt
½ tsp. celery salt
½ tsp. paprika
¼ tsp. pepper
2 eggs
1 cup milk
½ lb. cheese cut in ½ cubes
1 tbsp. butter or margarine
Cut stem ends from peppers, remove seeds.
Slice 4 thin rings from center of each and set aside for garnish.
Chop remaining peppers (about ½ cup.
Sauté chopped peppers and onion in shortening just until soft.
Mix ground beef lightly with saltines, salt celery salt, paprika, pepper,
    Eggs and mix until well blended; stir in pepper-onion mixture then fold in cheese cubes.
Pack lightly into a 6-cup oval round baking dish; unmold in shallow baking pan; score
1.       Top in cress-cross pattern.
Bake in moderate oven 350F (177 C) 1 hour or until brown.
Sauté pepper rings in butter or margarine turning once, until slightly wilted
Arrange around loaf. Serve 6 to 8.
